Chuey Fu’s

When I did my first and only review for a food truck back in November of 2015, I was told they would be opening a restaurant soon.  Well in 2017 I had the chance to head back to Denver and you bet your ass I stopped into Chuey Fu’s to see how they did and I was speechless.


When I walked in it was a dim place with red lights and metal signs with their logo around.  Their wall of tequila was a pleasant looking site and since this place is Asian-Latin fusion I figure they can’t steer me wrong.  I instantly ordered a Mexican Mule which had Tequila and Ginger Beer.  I loved their food truck years ago and with most places they either do justice to that or they lose a piece of themselves by opening a restaurant.  This place was enhanced.


Looking over the menu I ordered an Ancho Chili Chicken rice bowl and a Korean Beef Taco.  The Ancho Chili Chicken rice bowl was a rice bowl piled with their Ancho-Chili Chicken then covered with a sesame peanut sauce, cabbage, pickled onions and fresh cilantro.  The peanut sauce mixed with the chicken and rice made for such a great flavor mix.  The pickled onion on top added a bitter finish which brought an explosion of flavor to my mouth with each bite.


The Korean Beef taco had a chipotle sauce on top with cabbage, pickled red onion and cilantro also.  The chipotle sauce had a little kick but more then that it had such a great flavor and the beef was marinated and cooked perfectly.

 

So I have to say that if you are anywhere near Denver and want a meal that will blow your mind head into Chuey Fu’s.  The surrounding neighborhood is full of some of the best graffiti murals I have ever seen in my travels and the culture in this area is just great.
